Noodles are the loving food around the world among teens and adults, and Japanese noodles are above of all others, this is how you prepare it:
50 g kombu (a brown seaweed used in Japanese cooking)
400 g noodles
20 g of carrots
2 g of ginger
1 spring onion
1/2 l of water
2 tablespoons Japanese soy sauce
2 tablespoons mirin(a rice wine used as a flavouring in Japanese cooking)
Bring water to a boil. Let it cool down to lukewarm and soak the kombu for an hour.
Bring water to the boil again for the noodles. Put the noodles in the boiling water and cook for 6 minutes.
Warm the water together with the soy sauce and the mirin in a saucepan for the stock. Bring to the boil and then remove the pan from the heat.
Grate the carrot and ginger with a fine grater and add it to the stock
Rinse the noodles after cooking with cold water, drain them. Place them in a bowl. Pour over the stock with the kombu.
Distribute over the bowls and finish with chopped spring onion.
